No bake cookies that are nut free!
Packed with oats and creamy sunflower butter, these no bake cookies make a delicious treat and are a healthy lunchbox snack for schools that are nut free. My kids love them as an after school bite or post-game energy recharger, too. Bonus, they are easy and fun to make with your kids.
No Bake Cookies (Without Peanut Butter)

Wait time: 10 minutes
Makes about 24 cookies
Ingredients for No Bake Oatmeal Cookies Without Peanut Butter:
1 cup rolled oats (not the quick cook kind)
½ cup all-purpose whole wheat flour
½ cup sunflower butter
½ cup honey
¼ cup dark chocolate chips or dried fruit such as cranberries or raisins
¾ cup shredded unsweetened coconut
Directions for No Bake Oatmeal Cookies Without Peanut Butter:
1. In the large bowl of a food processor, pulse the oats until fine, about 2 minutes.
2. Add the flour, sunflower butter, honey, and chocolate chips or dried fruit to the oats. Pulse again in the food processor until the mixture comes together into a large ball, about 2 minutes more.
3. Using a tablespoon, place a small amount of dough in your hands and roll it into a ball the size of a large marble. Roll each cookie in the shredded coconut. Let your kids shape the cookies however they like. My kids usually leave them as bite-sized marbles, or press them in the center with their thumb and add a piece of dried fruit or a chocolate chip for decoration.
4. Refrigerate the cookies for 10 minutes before serving. Store in the refrigerator or freezer for up to a week.
Tip: An alternative is to combine the dough by hand. After pulsing the oats, add all of the ingredients to a large mixing bowl and use your hands, or a spatula, to combine. This is a fun way to let your kids really get into the mix. You don’t need to be exact with the measurements, which means you can give lots of creative freedom to your kids.
